A LITTLE STORY
MASUMI — A SAKE STORY
AKA is brewed using yamahai, a traditional sake-making method that helps build complexity and savoury depth. But there is another small piece of sake history hiding in this bottle. Masumi is the birthplace of Yeast No. 7, discovered at the brewery in 1946. The yeast became so successful that it went on to be used by sake breweries across Japan. AKA still uses Masumi No. 7 today — a little connection between one glass and a much bigger chapter of modern sake.
